Pancake + Sausage Bites

These pancake bites are great for the kiddos. Prep them for the week or freeze them and eat them as you go. Warm them up and drizzle with some extra maple syrup for a sweet breakfast bite.

Instructions

  1. First preheat oven to 400 degrees and grease a mini muffin tin.
  2. Start browning sausage until cooked through and fat is absorbed back in. While the sausage is cooking, go ahead and shred your raw cheddar.
  3. Now you will make the pancake mix. In a medium bowl, mix the flour, milk, maple syrup, baking soda, baking powder, and salt until well combined.
  4. Lightly fold in the raw cheddar and sausage.
  5. Add pancake batter to mini muffin tin. About 2 Tbsp per muffin.
  6. Place in the oven and bake for about 15 minutes or until golden brown. You will know it is done if toothpick comes out clean from the center.
  7. Enjoy!

Notes

If using all purpose flour, you may need less liquid. You may only need about 1 1/2C of milk instead of 2 depending on the type of flour you are using. You want your pancake batter on the thicker side.
