- Roast the sweet potatoes. Preheat oven to 400. Toss the cubed sweet potatoes with the melted beef tallow, smoked paprika, garlic powder, onion powder, and salt. Spread in a single layer on a large sheet pan.
- Roast for about 30-45 minute, tossing about halfway through, until browned and crispy around the edges.
- Make the sloppy joes. While the potatoes roast, brown the bison in a large skillet over medium heat, breaking it apart as it cooks.
- Whisk together the ketchup, tomato paste, Worcestershire, maple syrup, mustard, balsamic vinegar, smoked paprika, garlic powder, and salt. Pour over the cooked bison and stir well.
- Simmer uncovered for 8-10 minutes, stirring occasionally, until the sauce is thick and glossy.
- Steam the broccoli until tender to your liking.
- Divide the crispy sweet potatoes, steamed broccoli, and maple barbecue, bison among bowls. Garnish with parsley if desired and serve warm.
