Taco Bowl
Taco Tuesday….does anyone still do that? We do in the Strasburger home. This puts a unique spin on your tacos. The sweet potato give it a sweet profile mixed so well with the taco flavors, you won’t go back to your normal. While it may take time to prep this for the week but you and your spouse will be so thankful you prepped ahead of time for your future self.
One of my favorite ways to reheat this meal is to throw it in a skillet with some grass fed butter or olive oil and heat up until a bit crispy. Feel free to add delicious toppings like pickled onions, avocado, cheese, sour cream, etc…unless you are in a calorie deficit, than just eat as is!

Taco Tuesday anyone? Prep this on Sunday so you have a delicious but easy Tuesday coming up.

- First set your oven to 400 degrees.
- Wash and dice your sweet potatoes and throw on a sheet pan with parchment paper. Drizzle enough olive oil where all potatoes are covered and sprinkle flaky sea salt on top. Place in oven and cook for approximately 25-30 minutes depending on how small you diced.
- Now we will make your meat. Dice all your bell peppers and onion. If you can't fit all 5 pounds of meat in your skillet, you will need to do batches. You will cook 1:1 ratio with the bell peppers and meat. 1lb : 1 bell pepper. Cook your meat, onion, and bell pepper all at the same time until your beef is browned and veggies are soft and onion is translucent. Next add your taco seasoning according to packet. Once everything is combined and you have let simmer until no more liquid, set aside.
- Now we will steam our broccoli. Wash, cut, and place your broccoli in a steamer and steam until your tenderness preference, I like to have a bit of crunch and a bright green personally.
- Once the potatoes are done, you will assemble your bowls. You will have approximately 4oz of taco meat, 1/2-1C of sweet potatoes, and 1C of broccoli per container. Top the entire dish with some flaky sea salt.
