Instructions

  1. Prepare the potatoes. Peel and cut potatoes into evenly sized chunks. Place in a large pot and cover with cold water. Salt the water generously.
  2. Boil until tender. Bring to a boil and cook for approximately 15-20 minutes, or until potatoes are easily pierced with a fork.
  3. Prepare the garlic-herb butter. In a small bowl, combine softened butter, minced garlic, Italian seasoning, parsley, salt, and Parmesan. Mix with a hand mixer until thoroughly combined.
  4. Drain and mash. Once tender, drain the potatoes well and return them to the warm pot. Allow excess moisture to evaporate for about one minute.
  5. Add the butter, milk, and salt. Add the garlic-herb butter, milk, and a generous amount of salt directly to the potatoes.
  6. Mix until smooth. Using a hand mixer, beat the potatoes until smooth and creamy, being careful not to over mix.
  7. Taste and serve. Taste and adjust the salt or butter as needed. Serve warm with an extra pat of garlic-herb butter, if desired.

Notes

Hand mixers make wonderfully smooth mashed potatoes, but mixing too long can make them gummy.
