Homemade Gluten-Free Goldfish Crackers

- Grate your cheddar finely. Freshly grated is important here - it blends into the dough much better than thicker shreds.
- In a food processor, add the flour, cheddar, butter, salt, garlic powder, and paprika. Pulse until everything looks like coarse crumbs.
- Add 1 tablespoon of cold water at a time, pulsing between additions. Stop as soon as the dough starts clumping together. You don't want it wet or sticky.
- Press the dough into a disc, wrap it, and refrigerate for about 30 minutes. This will make the GF flour easier to roll out.
- Heat over to 350 degrees. Roll the dough between two pieces of parchment paper until it's about 1/8 inch thick. For really crispy Goldfish, you can go just a tad bit thinner.
- Cut out your little fish. Transfer them to a parchment-lined baking sheet. They don't need to spread much, so they can be fairly close together. Repeat until all your dough is used up.
- Bake about 13-15 minutes, depending on thickness. You're looking for a dry, crisp edges with a little golden browning. The thinner ones may be ready closer to 11-12 minutes.
- Important: Let them cool completely before judging the texture. They crisp up significantly as they cool.

While the first batch bakes, continue rolling and cutting the remaining dough.
