Homemade Tomato Soup + Grilled Cheese

I absolutely love cooking in this winter season. Give me all the warm foods, casseroles, soups, crockpot meals. If it’s easy, quick, and feeds a lot, it’s my kind of meal. Luckily for me my children love tomato soup so that’s why I’ve created this dish because if it’s not chicken, or spaghetti, their asking for tomato soup and I’m not mad about it.

This tomato soup is very simple and basic but dip this elevated grilled cheese in the soup and your taste buds will thank you. We are not just using a normal butter on this grilled cheese, but a very simple and (easy to make your own) herb butter. This one simple ingredient makes a world of difference in this meal.

Tomato Soup + Grilled Cheese

This simple and basic tomato soup is just tomato soup, until you dip this elevated grilled cheese in it, and it's next level. Next time you need to warm up, cook this dish up and enjoy this comfort it brings.

  1. First you will chop your onion and garlic, then place in a deep dutch oven with 2 tbsp olive oil on a medium heat and cook until onion is translucent.
  2. Next, add the tomatoes with their juices and chicken broth. Bring to a boil then let simmer for about 15 minutes.
  3. Once your soup has cooked for 15 minutes, add in about half of the fresh basil, grab an immersion blender and blend until soup is completely smooth. You can also pour your soup into a regular blender and blend until smooth.
  4. Return soup to the dutch oven and add in your heavy cream, salt, and pepper to taste. Continue to cook and simmer for about 20 minutes so all the flavors meld together.
  5. While your soup is cooking for 20 minutes, go ahead and grill your cheese sandwiches.
  6. You can purchase herb butter or simply make your own. (I love to add 2 tbsp of a bunch of different herbs like thyme, rosemary, oregano, basil, and minced garlic to 2 sticks of grass fed butter (kerrygold to be exact), and mix until well combined.
  7. Butter your bread, add your cheese, and grill on your stovetop until crispy and cheese is melty.
  8. Once your soup is done, so should your sandwiches. Enjoy!
