You need to add this meal to your weekly rotation. This will quickly become the mens favorite recipe in your home. Great meal that re-heats up well for leftovers throughout the week.

Instructions

  1. First we will start by preparing the rice. Get two cups of rice and rinse with cold water, twice. After rinsing and draining the rice, add the rice, can of coconut cream, 1C of water, and a big pinch of salt in a medium saucepan. Uncovered, bring your rice to a boil on high heat. Once boil begins, turn down to low, cover, and cook for about 15 minutes. Once liquid is absorbed, take off heat and let sit covered for 10 min.
  2. Now we will wash and trim broccoli and set aside. Go ahead and chop the green onions and shallot while you have your cutting board out. Keep separated though.
  3. We will now cook the bison. You can use a medium skillet, turn on medium/high heat and add about 1 tbsp of sesame oil. Once warm, you will add your bison. When halfway cooked and broken up, add the ginger, red pepper flakes, garlic powder, and onion powder. Cook meat until brown and all the fat is absorbed back into the meat. You want the meat to get a bit crispy so towards the end, use a spatula to flatten the meat and do not mix for a few minutes to get a good crisp on your ground meat.
  4. Start steaming your broccoli while your meat is browning. This should take around 8-10 minutes.
  5. Next, you can add the coconut aminos to the bison. Again, you don't want to mix this too much, you want a good crisp on the ground meat so let it cook without touching it for about 5-7ish minutes.
  6. Once your meat, rice, and broccoli are all prepared. Now you can assemble your bowls. Layer your rice, with meat and broccoli on top!
  7. Enjoy!

Notes

Keep in mind, if you don't like a ton of heat, add less red pepper flakes or if you enjoy lots of spice add more. Adding pickled red onion to this bowl would be delicious as well!
