This delicious bowl style dinner is a great option to add to your weekly rotation.

  1. First you'll want to preheat your oven to 400 degrees. Grab a large baking sheet and place parchment paper on it.
  2. Next, wash and dice your sweet potatoes and place in a medium size bowl. Drizzle a healthy amount of olive or avocado oil and about 1-2 tsp of salt. Use your hands to mix well and spread out evenly on your baking sheet. When oven reaches 400 degrees, place the potatoes in your oven and cook for 40-45 minutes.
  3. Next we will prepare the broccoli. Get another baking sheet and place parchment paper on it. Now, you can wash and cut your broccoli into the size you like your florets. Drizzle olive or avocado oil and sprinkle some salt, massage the broccoli with your hands until well covered. Place on your baking sheet and once your sweet potatoes have a remaining 20 minutes left of cooking, add your broccoli to the oven and cook 20-25 minutes.
  4. Now we will brown the ground bison on medium heat on a skillet. Cut your bell pepper and add to the raw bison while cooking.
  5. Once meat is browned and fat is almost all absorbed back into the meat, add the siete taco seasoning and 2/3C of water. Mix well and let simmer for a few minutes.
  6. Go ahead and finish chopping and prepping the cilantro, green onions, red onion, and avocado.
  7. Once meat, potatoes, and broccoli are cooked. Add to your bowl with all of your toppings and ENJOY!

Notes

This would be a great recipe for meal prepping or just for family dinner. This is easily customizable for the adults and kiddos in the house.


If you don't enjoy roasted broccoli, you can easily steam your broccoli instead.
