Hot Honey Bison Bowl
This easy Hot Honey Bison Bowl recipe combines lean ground bison, roasted sweet potatoes, cottage cheese, avocado, and hot honey for a healthy, high protein dinner that's perfect for meal prep or busy weeknights.

Prepare the Sweet Potatoes
- Preheat the oven to 400 degrees.
- Wash and dice your potatoes into bite sized pieces and lay on a sheet pan lined with parchment paper.
- Toss the sweet potatoes with avocado oil, paprika, garlic powder, onion powder, and salt.
- Roast for about 30-45 minutes, flipping halfway through.
Cooking the Rice
- While the potatoes roast, let start rinsing your rice. I like to rinse with water about 3 times, the water will be less cloudy.
- Once fully rinsed, add to your pot and add your beef broth.
- Let your rice and beef broth come to a boil, once it starts, give it a good stir, cover, and reduce the heat, and cook according to the package directions.
- Fluff with a fork.
Roast the Vegetables
- Spread your frozen vegetable mix on a sheet pan lined with parchment paper.
- Roast according to the package directions until tender and lightly browned.
Cook the Bison
- Place your bison in a skillet over medium-high heat.
- Once the bison is browned, add in the chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Pour in 1/4 cup of water, stir to combine, and let the mixture simmer for 2-3 minutes, or until the liquid has mostly evaporated and the flavors have melded together.
Assemble the Bowls
- Divide the rice among four bowls.
- Top with the seasoned bison, roasted sweet potatoes, roasted vegetables, cottage cheese, avocado, and pickled onions.
- Sprinkle the avocado with sea salt (Chunky grey salt if you have it) and finish with a generous drizzle of Mike's Hot Honey.
